Pumpkin Seeds, Spicy & Sweet

When you carve your jack-o-lantern don't throw away the guts!! Those seeds are snacking gold, whether you make them sweeter or spicy. Pumpkin seeds are packed with valuable nutrients like magnesium, zinc, and healthy fats. Toasting them will keep for one week in an airtight container.

🎃SPICY🎃

  • 2 cups pumpkin seeds, picked clear of pulp and rinsed
  • 2 TB olive oil
  • 1 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • Several dashes of Worcestershire sauce
  1. Preheat oven to 325 F. Pat the seeds dry with paper towels.
  2. Toss the pumpkin seeds with the oil, sail, cayenne, and W. sauce in a medium bowl.
  3. Spread them on a rimmed baking sheet and roast for about 25 minutes, shaking the pan occasionally, until brown and crunchy. Serve warm or at room temperature

🎃SWEET🎃

  • 2 TB olive oil
  • 1/2 tsp salt
  • 1 TB butter
  • 1/3 cup sugar
  • 1/2 tsp pumpkin pie spice
  1. Preheat oven to 325 F. Pat the seeds dry with paper towels.
  2. Toss the pumpkin seeds with the oil and salt in a medium bowl.
  3. Spread them on a rimmed baking sheet and roast for about 25 minutes, shaking the pan occasionally, until brown and crunchy.
  4. Melt the butter in a large skillet over medium heat. Stir in 2 TB of the sugar and cook 2-3 minutes (keep stirring) until the sugar begins to melt.

Super Simple Broom Cookies

Ingredients:

  • One roll of refrigerated cookie dough like peanut butter or sugar. Make your own if you prefer.
  • Long pretzel sticks
  • Icing in your choice of color

Slice cookie dough and shape something like a broom.

Use a fork or the back of a butter knife to make the indentions for the bristles.

Lay a pretzel stick under the cookie far enough to form the cookie around it to secure it in place.

Bake

Pipe an icing line or several to accent it.

Enjoy

You can double the quantity by cutting the cookie rounds in half and using smaller pretzels.
