It is a tomato sauced that is seasoned and brought to a simmer. Then you crack some raw eggs in the sauce and let them poach. Once they are close to the doneness you like you can put cheese on top and let it melt. I can't do eggplant. Got sick after eating it once and since then I can't stand the thought of it lol Goulash
